Garlic Lime Salmon

It’s been awhile since I made Chicken Saag with the intention of trying a new recipe each week. I haven’t given up, i’ve just been busy/lazy.

Made this for The Lovely Wife tonight, it’s possibly the easiest thing I’ve ever cooked, and one of the tastiest.

What you need:

  • 1 tablespoon olive oil
  • 1 diced onion
  • 4 tablespoon lime juice
  • 1 teaspoon grated lime peel
  • 1 garlic clove, minced
  • 1 pound king salmon fillet
  • lime slices
  • What you do:

  • Start preheating the broiler.
  • Combine the oil, lime juice and lime peel, onion and garlic. Shake. (I used a cocktail shaker.)
  • Place salmon fillet skin down on some foil.
  • Cover with your mixture.
  • Stick it in the broiler about 2″ from the fire for 5 minutes. (Blackens some of the onions. We like this. If you don’t, start lower.)
  • Drop it to 4″ – 6″. Liberally apply more goo.
  • Cook for about another 10 minutes until fish flakes easily with a fork.
  • Garnish with lime slices.
  • The end result was great, the best part being the onions, which have soaked up all the limey/garlicy goodness. That, and the fact that the whole thing took me about 30 minutes total to put together.
